All the information you need has already been discussed before, but in a nutshell, there is no difference between a Carnival and a Sedona. The first generation was named Carnival, the second gen (around year 2002) was named Sedona, following the name used in the US market. If you get a 2nd gen unit from the grey market, it will most likely bear the Carnival instead of the Sedona badge.
The year 2000 model you mentioned is most likely a 1st gen Carnival, like this one:
It has a different hood scoop, fog lamps, and rear tail lamps compared with the 2nd gen Sedona. The 1st gen doesn't have lock-open sliding doors either.
The main thing to watch out for in the 1st gen release is the oil pump chain (it makes a grinding noise when it's about to break). Maybe the other members can recall other problem areas.
