in the tropics, the thermostat's function is to have the engine reach working temperature faster.
when the engine is cold, the thermostat is closed. the coolant in the cylinder block has nowhere to go, and therefore heats up fast.
as the temp increases, the thermostat opens up. this allows the hot coolant to leave the engine block and go into the radiator, where it is cooled. it then goes back to the engine, where it cools the latter such that it does not overheat.
so why do we want the engine to reach working temperature fast?
the engine is more fuel-efficient at working temp.
it is also more efficient. period.
so what happens if the working temp is not reached fast?
we spend more for our fuel. just a bit. but more, nonetheless. and, it spews out more pollution.
also, the engine is less efficient. less oomph.
so why does mechanic recommend thermostat be removed?
it's one less part to malfunction.
and because he does not know why the designer placed it there in the first place.
