When talking about flagship phones in the last few years, most no longer have an SD card slot. They now have non-removable storage with sizes ranging between 256GB to 1TB. You can't just pop out the memory card and move it to the new phone. The contents needs to be copied through USB or over WiFi and the transfer time will depend on how much data is involved.
I don't know exactly why it takes longer to copy stuff phone-to-phone compared to copying files off say, a hard disk. But I believe that the Android file structure, integration, and some other hocus pocus that Smart Switch does adds a bit of overhead in the transfer. In other words, Smart Switch copies all your existing apps and settings over to the new phone so everything is where they should be, literally. My home page is like what it was in my old phone, integrated with the new features of the target phone, and some apps are already logged in to my account and ready to use.
