1. Sound deadening is simply optional as it's expensive for budget setups. If ever you want to, just deaden the doors where you'll be putting the speakers.
2. How many "speakers" can a head unit accomodate depends on their speaker-level and pre-out connections.
3. As for the gauge, you just try to get the the thickest that's sanely possible. I would suggest a 13AWG speaker wire gauge para wala ka na problema.. but 16AWG would do.

And just do it this way:
1. Buy a head unit which you can use its functions (if you don't use Bluetooth, it's kinda useless to purchase a BT capable one right?)
2. Change speakers
3. See if satisfied..
4. Proceed with more upgrades.
