If the aircon is cold then chances are the AC fan is working, but there should be 2 fans side by side, one which turns on and off with the air-conditioner and one which turns on and off with the thermostat in the coolant cooling the engine. The airconditioner heat exchanger is actually located in front of the radiator, so that the compfort of the occupants of the vehicle are looked after more than the temperature of the engine!!
I just wanted to know if your fans are working at all! If they are, then its time to take a look at the condition of the air-conditioner heat exchanger, which may be blocking the flow of air over the radiator.
I suspect this is the case as airflow over the radiator has twice the effect as a liquid flow issue, and this corresponds to your description of the problem being non existent at night time.
Clean it out with a good hose to get rid of all the bugs and ensure all the fins aren't all mashed together blocking the flow of air to the actual radiator.
I highly doubt this is a problem inside the engine, if it was a flow problem, (thermostat stuck, rusted/worn impeller on water pump, or clogged radiator) you would be experiencing overheating every time you drive after say... 5 minutes.
Please do yourself a favour and flush the system again and use 50/50 coolant/distilled water form now on, it will be less problematic and any overheating will likely just result in the top 200 mls overflowing into the reservoir, and then get sucked back into the radiator on cool-down! Plain water will just boil as soon as there is an issue and you will have NOTHING cooling the engine!

can you determine if the thermo fans (located on the radiator) are functioning at all when hot?
You should hear them turning on and off, and if you switch the air-conditioner on, they should both be on! If not then this is the issue and its a simple electrical fault.
Also, is there any cream coloured sludge being deposited on the inside of you oil filler cap? If so, this means you have a head gasket issue.
finally, do you get any white smoke out the exhaust when idling, if so then even more certain of head gasket issue.
