Most kinilaw recipes i come across usually use these two fish.
i've also come across some recipes involving dilis, shrimp, alimasag.

What other stuff can i use? Pwede ba yung white meat fish? squid?

agree with bangus pero matinik. so you have to let it soak longer in vinegar para lumambot yung tinik. or para walang tinik dun ka bumili sa gumagawa ng boneless bangus, yung mga na de-boned na nila para less ang tinik...

Yup, it has to be the deboned bangus lalo na kung pampulutan. Kakainit ng ulo pag hindi deboned. Malakas makalasing ang inis. On a positive note, medyo tipid sa pulytan pag matinik.

squid or octopus, yung bagong huli. cut into small pieces, add vinegar, soy sauce, chopped onions and sili, sarap nyan pag may kasamang ice cold beer. pwede din yung giant squid, parang sashimi lang.

beef, also dapat bagong katay. syempre either sirloin or tenderloin, yung walang tendons. inaabangan namin ito sa probinsiya, 4am pa lang namamalenke na. same recipe, or even basic kikoman and wasabe will do. pero mas masarap pag medyo nababad sa vinegar.

jumping salad (freshly caught river shrimp), nilalagyan lang ng kalamansi and vinegar. pero takot na kami kasi ang dami nang rivers na may schistosomiasis. kahit yung mga adik sa kilawin sa amin inaayawan na yan.
