For standalone, you can use sniffers as a tool to see what they are doing. But that is considered as intrusion to privacy if you don't have a clear usage policy in place. Puede kang kasuhan kung wala kayong policy
But IMO, if the laptop are company owned, then you'll need to impose acceptable usage policy on company owned computers. Policy that would penalized users that violates.
In most companies, bringing in personal laptop would need strict clearance before you can operate them in the premises. And in some companies all their laptops are USB "data port" disabled.
