i use chorizo in lieu of tinapa.

Mine is hondashi powder. Mahilig mag luto anak ko ng Japanese at na amoy ko ito sa mga ingredients nya, amoy salted fish without the fishy taste medyo smokey flavor din. Masarap naman sa monggo na may kasamang spinach.

from what i understand,
dashi is the generic umbrella name.
hondashi is a brand name thereof.
