I've read that some have problems with wheel alignment after installing strut/coil spacers on their trucks to achieve a leveled or lifted stance. Could this ball joint spacer be the solution or the missing piece?

Rims have more visual impact than tires so I would suggest that you change your rims first. 16" x 7" would still fit your stock tire. If you have enough money to change both rim and tire then you can go 17", 18" or higher for better overall appearance of your vehicle .

in my place, the shop that installed my suspension kit is known to use this method, spacer at the top of coil. sa montero, a 5/8" spacer will raise 2" sa front height to level the rear. baka same din sa strada. it is recommended to replace the shocks to a long-travel type (mostly aftermarket) kasi the stock shock has little more room to play. after that pina wheel alignment lang at wala naman daw problema sa ball joint.

Hmm.. To lift or not.. Ride is only a 2.5 4x2 non-vgt with 3.9 gear ratio. Would there be any problems if I upgrade to 32x11.5r15 (290/75r16 equivalent) all-terrains aside from fuel economy?
I read kase that 31" tires is good for 3.9 gear ratio for uphill power with heavy loads (loads will be occasional though). Or will a performance chip be needed when up-sizing the tires?
Shocks will most probably be Ironman nitro gas with strut/coil spacers, ball joint spacers, and rear lift blocks with new U-bolts.

I know some 4x2 non-vgt Strada owners that had their rides lifted by 2" and are using either 265/70 or 265/75/16 AT tires. Jeff's Offroad Shop did a 5" lift on both 3.2 4x4 and 2.5 4x2 and fitted both with 33" tires. Jeff told me he was surprised that the 2.5 has better acceleration than the 3.2. Are your rims 15"? Not sure if 15" will have enough clearance for the brake rotors unless the rims have sufficient negative offset.
The Ironman kit, I think, doesn't have coil spacers because the shock itself is longer with longer set of coils but the added height is only 1.5". The rear leaf spring is also longer so lift blocks are not provided.

Been using 15x9 wheels with +12 offset (5-inch backspace) for almost 2 years. Space is just enough to clear the brake calipers. Plan to use custom coil and ball joint spacers and rear lift blocks with longer U-bolts. Only the shocks will be from Ironman (I read that their Triton shocks are applicable for 0-50mm lift).
Did the 33" tire-mounted 2.5 with better acceleration have VGT?

Good that you didn't have problems fitting the 15" wheels.
I the Ironman shock gives a 50mm lift by itself so adding a coil spacer will extend the lift further. Please correct me if I'm wrong. Mine is 3" with extended upper arms and front differential lowering bracket so the CV joints are not angled too much.
AFAIK, the 2.5 with the 33" is not yet VGT equipped.
