A friend of mine sent me a site about a local bread - Walter Bread - that has a healthy bread line. It says that for their sugar-free they do not use aspartame. Isomalt is what they use.
I was told that aspartame is used in popular local Sugar-free Breads and apparently has problems when baked since it becomes unstable at higher temps. It causes a chemical change I am led to believe
Also it says you can actually submit healthy recipes and win prizes. Hope they have a car prize soon. Or even accessories. LOL. Could be interesting way to submit your fave concoction and at the same time get other interesting healthy recipes to enjoy.
