Beyond Lisbon: Uncovering Hidden Gems in Portugal

We really enjoyed our trip to the Czech Republic last year, and we are now planning a trip to Portugal next year. I was wondering if anyone have any recommendations for some off-the-beaten-path destinations beyond Lisbon that might be worth checking out? It would also be great to get suggestions for any local specialties, dishes or drinks we shouldn't miss while there. I think the best beers will still be from Czechia, but I am willing to try some good beers in Portugal as well. Additionally, if anyone knows of any charming medieval villages or towns they'd recommend wandering around in, I'd love to hear about those as well. Hoping to curate an amazing Portuguese adventure and appreciate any insider tips!
