My guess would be twofold: Aesthetics and Ergonomics.
Aesthetics is self-explanatory... less bulge in the area between the cups makes it more sleek (and ***y).
Ergonomics because, you cannot put adjustable latches/hooks up front as this would change the distance between the cups. The said distance should remain constant to maintain the proper breast profile (just made that up) even if the wearer needs to readjust the bra's tightness for proper fit.
When bras were designed, materials / technology was not yet available during the time for a front clasp / hook design, hence the most logical was to place them at the back. Placing the hooks at the back was the most comfortable and practical way. Placing them at the sides would be uncomfortable also. Technology has caught up already and there are bras design to be opened from the front but most designs still use the back hook since they are more reliable and comfortable for most cup sizes. Plus the front hok design are usually made of plastic so they are not so durable.
I think this is the most accurate answer. Bras that have a front opening aren't as prolific as those that have a back opening. I don't really know why. Those that have a front opening aren't adjustable, unlike those that open at the back which you could adjust thrice. I think men would have a harder time with the front opening bra coz it's not just a simple hook. hehe.
