not all cylinder head jobs require resurfacing of the gasket side. check for warpage and corrosion first. the cylinder head profile is reduced when the head is shaved and it affects the compression ratio, the clearance of the piston to the valves, the valve timing for overhead cam engines, and it sure is a PITA adjusting valve clearance on most of today's cars with shim spacer adjuster for valve lash. if you suspect loss of coolant through the cylinder head/gasket, check for bubbles in the radiator with the radiator cap removed and the engine running.
