Walter, you need an ODB dongle plugged. Torque and Dash Command are the popular ODB apps, but you need to pay up for get all features running. Both apps have HUD mode, but I think you'll still need to make an effort and added hardware to get a good display.

We have a saying in the u.s. army : KISS (keep it simple stupid). The on board driver information system or the instrument panel should be enough while driving. Leave the on board diagnostics in the shop if the car is operating erratically or the malfunction indicator light is flashing or stays on. Leave the diagnostics to the trained and competent technician.

I also occasionally use an app (only as a speedometer) when I'm bored...

Would be nice if Waze/Google Maps support HUD mode.

I use my torque pro app mainly to monitor intake air temps and exact water temp - the digital dash temp gauge will not show movement from 80-95°C. With torque pro, I can see it, and I have set it to alarm when it reaches 93°C. I don't want my engine running hotter than 95°C. Since I don't have an EGT gauge yet, this works for me.

It is very important that I know when to take it easy on the throttle. I usually haul heavy stuff/people with my turbo diesel suv. Keeping water coolant temps in check will ensure a long service life for my engine.
