Generally, that's pretty much correct. Although, different engines from different manufacturers will have slightly different optimal engine temps.

The temperature at which the thermostat opens up kinda gives you an idea about how engine temp varies from one engine model to another. The specs below were taken from the shop manual for the Civic FD 2.0L and 1.8L engines.

Honda K20Z thermostat:
Starts Opening: 80-84 °C (176-183 °F)
Fully Open: 95 °C (203 °F)

Honda R18A thermostat:
Starts Opening: 76-80 °C (169-176 °F)
Fully Open: 90 °C (194 °F)
