Usually brake line are lifetime, same as the life span of the engine perhaps more unless damage. Corrosion on the inside of the line are very rare even the most neglected car. Using DOT 3 is avery good idea since this fluid design to absorb small amount of moisture from the brake line, so it would be good to flush the brake system at least every few years.
So dont worry about those, but worry if you tried something out of the ordinary.

But the clutch fluid ... isn't there an alternative? Shifting down or up, there's
a crunching sound about 50% of the time. I've used rev matching and double de-clutching but they didn't seem to improve the chances of not having the sound.
To describe the sound, it's like someone eating over sized cracker nuts in an empty house. It's also hard to shift.

Its not about your clutch fluid is the problem here. If you're grinding gears you most likely have air in the clucth hydraulic lines. The slave cylinder is usually the first to go bad and you will notice this in the boot in the slave cylinder is wet.
Possible problem too is the clutch. Double clutching are only use on the older vehicle that do not have synchro-mesh in the gear box, the only benefits of double clutching is when downshifting. If you double clutching with a synchro-mesh gearbox you will cause damage into the synchro gears. Have it fix the clutch before you ruin the tranny too. Good luck!
