When do you replace your Shock Absorbers?
After 5 years (or 50k?) - I've been searching online and this is the common answer.
Or when you FEEL that it's time for a replacement?
Do you replace them with "original parts" or third party (like Bilstein)

Depends on usage.
Usually if there are obvious leaks and the car "wallows" or "bounces" those are clear signs that shocks are for replacement.

The 3rd party to which you refer (at least the big established ones like bilstein koni boge kayaba etc.) are most often the ones who make the OEM stuff as well. For the most part they are the same exact shocks just contracted by the automobile manufacturer to have their own markings.
