Unless you're building a rear-wheel drive drag racer and need to fit wrinkle-wall Hoosiers on the back, there's no reason to have taller rear tires. Wider, maybe, if it's a rear-wheel drive sports car, but not taller.
Taller rear tires will make the ride uneven, stress the suspension and can lead to a higher tendency to oversteer by shifting the center of gravity forward, unloading the rear tires, and raising the rear roll center, causing more body roll and sway in the rear.
Not that you'll really notice such things in regular driving... but you'll definitely notice how useless your headlights are if the nose of your car is pointed at the ground...
