Aside from the many rumors and speculations, most manufacturers are keeping a tight lid on which current smartphones will officially support Gingerbread. While I'm sure that the geniuses at xda-developers will be able to port most 2.x smartphones to 2.3, I'm presuming that this is not what you have in mind.

I myself is looking forward to an official update for my Desire Z (Froyo).

it's a useless upgrade imho. Android itself announced that the upcoming Honeycomb will be complete redesigned from scratch to support dual core processors and to better adapt to the upcoming tablet generation.

Honeycomb is the next version of the Android platform, designed from the ground up for devices with larger screen sizes, particularly tablets.

That's the pace of technology. You can wait to purchase the latest technology or version forever, but it becomes effectively obsolete the moment they're released. Given the speed at which Google is churning out new versions of the OS, they would probably already have a working prototype of Ice Cream before Honeycomb sees the light of day. But if you want the Android experience now, Froyo is mainstream and is stable so there's no harm getting it.

The trick is to select a phone manufacturer that gives you the best chance that an OS update will be made available whenever they're released. This will somewhat prolong the life of your smartphone. I heard that HTC is one of a few who does it.

Hopefully, the developers at samdroid can port this version to the Galaxy Spica.
