1. presence or absence of the thermostat does not affect final engine temp or cause overheating. what the thermostat does, is to make the engine temp rise faster, resulting in reduction in pollution emission, and in improvement in fuel efficiency, even if only a little bit.
the thermostat's effect is more palpable in temperate countries where ice and snow are seen.
2. abnormal loss of coolant in the reservoir, suggests your engine or radiator is blowing a lot of steam into the reservoir, causing the coolant therein to heat up and boil away.
a. have your aux fans evaluated. maybe they do not draw as much air as before.. baka dapat nang palitan. or,
b. mebbe your radiator cap needs replacement. or,
c. your radiator is blocked (from the inside) and/or its fins are dirty (from the outside).
another possibility is, your reservoir leaks.
