That's actually because in Europe, they used Pagan spirits and demons in their design to call people in. In other words, lure them in with something familiar... then convert them. The Church has adopted a lot of symbolism from local cultures in its spread around the world.

When one culture supersedes another, the old religion's Gods often become the new religion's demons. Thus, the gargoyles adopted as spiritual "guard dogs" for Medieval churches.
