what we always do is asked friends from Cebu to buy the lechon for us sa CNT, 'coz alam ng mga locals doon kung what time dapat pumili dahil mabilis maubos then order na nila tapos pag pick up diretso na nila sa airport depende sa time ng occasion namin dito kung anong oras yun flight na ipapadala and kung anong oras nila kukunin para malutong pa pag dating dito...

here's the website that you can order lechon cebu, I haven't tried there service so I can't comment on them...maybe contact them and ask na lang...

    http://www.lechoncebu.com/

Elar's is also very good. You might also want to try the Pritson which is deep friend lechon... The best one I tasted was a homemade one done at my classmate's debut a few years ago. I heard they're relatives of the owners of Baliwag Lechon Manok... so when they made lechon baboy, homemade for the occassion it was also very good.

The question is also not just WHERE but rather WHEN...

I do not recommend you buy lechons at christmas time. Lechon is supposed to be cooked for a few hours over a LOW flame. Our experience though is that Lechon in christmas time is not as good (often times bordering on BAD). Kasi the demand is high, so the lechon makers rush the cooking part, kaya hindi tuloy masarap

Also trivia: You can buy lechon in 3 stages:
    1) Freshly cooked
    2) Partly cooked
    3) Yesterday's leftover pieces.

Yupyup, I'v met some carinderias who purchase the partly cooked lechon or the Yesterday's leftover pieces to be made into Paksiw.
