fresh milk - straight from the cow usually pasteurized or heat treated before packaging. can be consumed directly by drinking or with cereals etc.
skim milk - milk whose cream was removed. if you let fresh milk stand for some time, it will separate into two layers. the upper layer is the cream, the lower layer is the skim milk.
evaporated milk - milk whose moisture content is reduced (maybe through evaporation). can be reconstituted by adding water.
condensed milk - like evap but with sugar added.
soya milk - milk like drink from soya beans
homogenized milk - milk whose protein (or fat, not sure) made into uniform sizes hehehe
filled milk - milk whose cream was removed then replace with some other fat

afaik full cream milk are the fresh milk, if its powdered full cream milk the process it undergoes is to boil the milk and or let let it dry then powderize it, creams or fats are added to integrate the milk in powdered form or fats is added to make it creamier.
low or non fat milk solid, same procedure, similar to the process above wherein the water content of the milk is dried off.
