Not much else besides the power supply ...
You need to power the PS2 Slim from an 8.5v DC power source - you can't connect it directly to 12v. I don't think you can easily find one in shops, but anyone with a good knowledge in electronics should be able to design one for you. A simple voltage regulator chip (like a 78xx) and a pass transistor or two should be able to produce the required 8.5v DC * 5.5 Amperes the PS2 Slim needs.
Or use an inverter and the PS2's AC-to-DC supply.

You should have the same video connectors for the PS2 and monitor. They usually come with RCA phono connectors.
If your head unit doesn't have an AUX-IN (or iPod/MP3 connector) you should choose a monitor with a built-in speaker and input connector.
I have no idea what brand name CDR King is selling. More important than brand names are the electrical ratings. You need a DC to AC inverter that converts 12v DC to 220v AC. For the power rating, it should be able to handle 50 watts continuously (not intermittently nor the peak rating). Anything that can handle higher than 50w continuously is OK.
You connect the inverter to the car's electrical system, either thru the cigarette lighter socket or the car's 12v line, whichever it needs. If it needs to be connected thru the lighter socket, make sure that the socket can handle more than 5.5 amperes (read the car's manual or look at the fuse rating).
Your PS2 power supply's AC input goes into the inverter, and the DC output to the PS2.

For the audio part, you'll need a patch cable ... two RCA phono sockets (for stereo) on one end and a stereo 3.5mm headphone plug on the other end. You can then listen to the PS2 on your iPod-ready head unit.
For the video, it will depend on your monitor's connector. Just buy the appropriate connector (or connector adapter) if it needs one.

Finally ... I don't recommend using a game console like the PS2 while your car is in motion - even by your passenger/s. These consoles weren't really designed to be jarred or bumped while the disc drive is operating unlike the drives in head units.
