Have your wirings re-checked. AFAIR, Pioneer HUs have a cable (it used to be colored light blue or something in that hue - at least in my old KEH HU) that you need to connect to either the car battery or to where the in-dash clock is connected. This "blue wire" essentially provides power to the..."memory module" of your HU so that your HU would "remember" it's settings everytime even though you shut-off your car.

the HU resets when you turn IT off or when you turn the IGNITION KEY off? if it's the llater of the two, it's definitely your wiring. have the shop that installed the HU redo the wiring for you since they're the ones who botched it up. but if you prefer to DIY it: yellow is the constant 12volt lead, red is the switched 12volt lead. get these two wires right and your problem should be solved.
