How can it be a Coupe if it's got 4 doors? Isn't the definition of a coupe for automotive terms 2 doors with a 2+2 seating arrangement. I guess it's another one of those terms that companies like BMW feel like changing to fit their use.

The most popular(traditional?) version of the modern coupe automobile is the one with 2-doors, but through the decades more and more coupe styles have been introduced.
For example there was the 1960's Rover P5 4-door coupe.

It was like the regular P5 sedan but with a lower sportier roofline, a more recent example of this would be the E-class based Mercedes CLS 4-door coupe.

BMW just added a new twist, which is an SUV-Coupe Crossover vehicle(they call it Sports Activity Coupe).
How to describe it... its like an X5 but with a lower sportier coupe-like roofline.
    BMW X6

Technically, it would probably still be classified as a Crossover SUV.

    BMW X5

More traditional wagon like profile(the new X5 is available with 3rd row seats)

PS: Coupe, past participle of couper which means "to cut".
