Mechanism of formation is different. hawaiian volcanoes are "hot spot" volcanoes. Source of magma is almost similar to mantle material or what is called "primitive". Not much water (not so explosive eruptions), hotter, low in silica and high in iron and magnesium (black and smoother lava), hence flows much easier. In contrast Philippine and New Zealand volcanoes are island arc type. Magma comes from partially-melted material under the crust caused by mixing of water. The water acts as a "flux", makes the melting point of the rocks lower. The water come from oceanic crust diving under another crust. The water makes our volcanoes more explosive, and because the magma comes form recycled rocks, its less-"primitive" and therefore has higher silica, lower tempearture and slightly lower iron and magnesium content (lava is lighter in color and more blocky).
