I think wala talaga silang meanings. It's just to different the variants across a specific model line.
Although among the codes you mentioned, yung ES lang ang naiiba. It's the body code of the 7th gen civic, all the rest are variants.
Of course, the small letter 'i' stands for injected (fuel injected).
AFAIK
G- usually stands for Grand
S- Sports
L- Luxury
E/EX - executive (just like EX series)
T- Touring/Turismo
X - unknown (parang sa Algebra)hehehe...hate this subject anyway...
R - definitely a RACE car!
