Do you have a favorite cooking knife?

I'm just wondering if anyone have a special cooking knife? I usually just buy from department store around less than ₱1k. Ok naman sya it last for years pero problem ko I need to sharpen it after few uses.

Now I'm seeing these knives at amazon that cost more than $200 may mga Japanese name and may etch pa, one I remember is damascus. I wonder if the price of those are just for the etch, or the price is also because it stays sharp longer than cheap ones. Maybe it's using special metal?

I guess I'm asking if anyone here have special cooking knives and your experience.

my favorite was not even purchased in a store.
it is a generic locally-produced knife that i purchased from an ambulant vendor in banawe, while i was having my car fixed there.
eight inches long blade and a wood handle.
it's been more than ten years, and it's still going strong.
"yari raw sa bulitas."

when buying knife,
i recommend one with a thicker blade, one that won't bend. it keeps its sharpness longer.

there was this ad here in these threads, that kept popping up.
it was a japanese knife daw, a "samurai knife" that was so sharp daw.
i googled, and it seems it was a fake. it wasn't even made in japan.

my favorite sharpening instrument is the traditional two-surfaced sharpening stone "from czekoslovakia".
puede rin yung sharpening stick from the mall, but i think the sharpness wrought about by the stone lasted longer.

I also wondered and is amazed by those home tv knives that cut through meat and ice like they were bread and needs no sharpening too. But I resisted it cause I have the impression that all home tv products are just hyped. In the case of the knife and all other knife products, I believe it is the skill of the person who makes the knife look effective in the ad. Praktisado ung actor and I bet it was the best of several takes which is presented in the ad.

But going back to topic, my favorite knife before was a cheap serrated knife, I use it all of the time except for meat. Then came this shopwise knife coupon promo where I got a bigger flat blade all around knife which I use to this day, it's not my favorite but I just got used to it, needs frequent sharpening with a carborundum stone though.

what i find hard to believe,
is the show "forged in fire".
i can not believe that those blades do not have a mark on them, despite the torture they undergo during the testing process.
in my real life experience, i have yet to see an un-marred blade, after it is hacked against some hard object.
"remember, this test is not what your blade does to the block, but what the block does to your blade."

Damascus
Hammered - perhaps means it's forged by a blacksmirh rather than a machine made blade?
33 layered - number of times the steel is folded during forge?
Vg-10
Gyuto

Damascus I think is those patterns on the blade. Made by twisting the metal as it's being hammered into shape. Been hearing it a lot on the show Forged In Fire.

Hammered... Yeah I think it means forged the old fashioned way either by hand or machine. Sa YouTube kasi may napapanood akong gumagamit lang ng carbon steel bar which they just grind ang cut until magkorteng blade.

When I was shopping for knives for my kitchen, I looked at this Miracle Blade knife set also.
Mga 90's kids dito would know sikat na sikat ito sa mga TV shopping channels noon.
I've read the reviews and for those who actually bought the set, mukhang positive naman ang mga feedbacks.




Inisip ko na lang kailangan ko ba talaga ganito karaming blades?
Yung steak knives na lang, I don't think I would need the 4 of them at one time.
Probably mga 1 or 2 lang siguro sa whole set na ito which I would use regularly.
At duda rin ako sa balance nito just from the looks of it.

Besides, these are now cheaply Made in China so the Php299 ~ 600 average price online, thus I have doubts on its longevity.
Not sure saan gawa yung mga unang batch but those are the ones with feedbacks of 10 or so years of satisfactory use.

As for now, happy na muna ako dun sa nabili ko sa Mr. DIY na Japanese style chef knife.
Sharp and well balanced naman. You may just need to hit the sharpening block sometimes.

I just sharpen my "department store" knife before cooking for like 5 minutes. And it's a breeze to slice with it especially the satisfaction I felt when slicing kamatis. Pag mapurol medyo napipisa ang kamatis, pag matalim its like slicing butter.

some folks are not aware that it is so easy to sharpen a knife, using a sharpening rock or other similar tool.

i use it, too.
instead of running the blade to it, i run the stone to the blade.

we also have the metal rod sharpener that is conveniently available at the mall, but i find the stone's sharpness lasts longer.
