inihaw na tuna belly, buntot ng tuna and panga ng tuna. inihaw na pla-pla. inihaw na tyan ng bangus. kilawing bangus. kilawing tanguigui. kilawing kambing and kalderetang kambing. pag nasa baguio ka try aw-aw (dog!), best is sweet-n-sour, kilawin or kaldereta.
mahilig ka sa kilawin/raw? if you can find real fresh supply, as in buhay pa o kakahuli lang fresh from the fishing boat, try kilawin na pusit and octopus, yung malaki. just slice the pusit into small-finger size slices, marinate in soy sauce, kalamansi, siling labuyo, ginger, onions. and wasabe and soy sauce on the side.
try also kilawing baka. you will need to go to the slaughterhouse for this at 4am (not possible if you're in manila, sa probinsya lang siguro since it has to be "just dead" fresh meat). get the sirloin. same recipe as the kilawing pusit/octopus. since 4am e nagprepare ka na ng pulutan, ibig sabihin nyan e 6am pa lang nagiinuman na! sarap nun, almusal mo pulutan saka gin! ganyan gawa namin sa zambales ng mga high skul friends ko, aga gising, aga inuman! tabing ilog, isang kahon na gin (hassle magdala ng ice for beer so gin ang preferred), 9am pa lang malagihay na ang utak ehehehehe!
