    Hallow fellas!

    I've been following some threads dito sa Pitstop Cafe at discussions dun sa shoutbox and it is very clear na marami sa atin na mahilig kumain. So, I'm assuming that a lot of us who love to eat eh also know how to cook, or at least know their way around the kitchen. So, I thought na "Hmm...why not start a thread about sharing cooking tips and recipes?"

    So, kung mahilig kayong magluto, have some nice recipes under your chef's hat or kung mahilig lang kayo mag stay around the kitchen, you can share your recipes and tips here. Honesty system tayo dito ha so let's not claim a recipe na tayo ang nag-invent pero hinde naman pala.

    You can share unique recipes and cooking styles/tips you found on the Internet as well.

    O sya, start na tayo! I'll go first. Simple lang share ko today - something I like to eat during Sunday breakfast: Spanish omelet, pandesal with kesong puti and a poor man's Cappucino using instant coffe and ordinary creamer.

    Spanish Omelet:

    This is cooked just like an ordinary omelet but instead of using broiler eggs, I use either duck eggs, eggs ng native manok or quail eggs. Also, ordinary omelet usually only has potatoes and onions. The omelete I make usually has French beans, bacon, green bell pepper, tomatoes and potatoes

    Ingredients: 2 eggs (4-6 if I use quail eggs), 1/2 onion (red), 2 medium siced potatoes, 1 large tomato 1/2 cup of French Beans (or any other beans) and 1/2 cup of bacon, a pinch of either skimmed milk or baking powder, salt and olive oil

    1. Peel the potatoes and slice them as thinly as possible. Salt the potatoes and mix em up so that the potatoes are evenly salted.
    2. Chop the onions, slice the bell pepper and slice the tomatoes using a sharp knife (para hinde mapisak). Set the tomato and pepper aside.
    3. Chop the bacon into small squarish shapes. Set aside.
    4. Get your frying pan and put in 2 teaspoons of olive oil. Heat the pan. When the pan is hot enough, throw in the chopped bacon.
    5. Once the bacon is threatening to go brown, add in the sliced potatoes and onions. Stir/mix well until the potatoes start to brown just a little bit then lower the heat. Once cooked, remove them from the pan, drain the oil and let the mixture cool a bit.
    6. Get a bowl, crack the eggs. Stir/beat the eggs. Put in the tomatoes and beans. Mix a bit then put in your bacon and potatoes. Add salt and/or pepper to taste.
    7. Heat up the pan again and put in 1-1.5 tablespoon of olive oil. Once the oil is hot, add in the mixture. Turn down the heat to the lowest setting and cook for about 10-15 minutes.
    8. Once there is no visible liquid on top, flip the omelet over to cook he other side. If you don't know how to flip an omelet using the pan or a spatula, use a plate: put a plate on top of the pan, turn it upside down and put the omelet back in. Let it cook for another 5-7 minutes.
    9. Put a dish or plate and sprinkle in some oregano for added flavor.


    Pandesal with Kesong Puti.

    You need the native kesong puti for this one, not the cottage cheese that one can buy from the super market. And oh, you need some pesto for this one. Simple lang to.

    1. Heat up your non-stick pan and add just a pinch of olive oil if you like pero ako, diretso yung kesong puti sa pan.
    2. Once the pan is hot enough, dump in the kesong puti. Keep turning until each side of the keso is somewhat brown. Wag nyong patagalin sa pan kase matutunaw yung keso. Set aside once cooked.
    3. Get your favorite pandesal and heat it up a bit. Slice it open, put in your kesong puti.
    4. Add pesto to taste.


    Poor Man's Cappucino:

    Eto interesting, he he. Gawa tayo parang cappucino using instant coffee, creamer and muscovado.

    1. Put in your usual mix of coffee and creamer into your coffee-stained cup.
    2. Add in just a little bit of hot (just boiled) water to the cup: approx 1 tablespoon.
    3. Stir fast until the mixture is syrupy. Add in the muscovado. Stir again until the mixture is real syrupy.
    4. Immediately pour in hot water.
    5. If you did this just right, you would see a froth on top of your coffee. Not a real big one but just enough for you to say "Hey! This does look like cappucino."

    FD's Quick Tanpulots

    Ingredients:
    1 pack Spiced Ham
    2-3 Green Peppers
    1 Big Onion "Bumbay"
    Cheese
    Hot Sauce
    Sugar
    Chili Pepper - optional

    Procedure:
    1. Just chop 'em all into small cubes, mix 'em in a plastic container and have it chilled for an hour.

    abay..sali ako dyan..oh eto recipe ko!!! have my own version for omelet din!
    simple lang

    Ham and basil omelet:
    2-3 medium eggs
    2 pieces of sweet cooked ham (diced)
    parmesan cheese
    dried basil or fresh

    Beat the eggs, then combine the other ingredients. Mix well.
    Heat pan and place cooking oil (vegetable/olive/corn oil) then place mixture.

    Serve with cheese and toast.


    And for Lamb lovers here's my recipe
    Lamb breast rib ( cut into small pieces and simmer in liquid to temderized before broiling)
    Marinade:
    2 cups of orange juice
    1/4 cup honey
    2 tsp salt
    1/2 tsp pepper
    1/2 tsp cinnamon
    1 tbsp lemon juice

    Mix all ingredients in a bowl.Marinate the lamb overnight.
    Place lamb and marinade on a foil-lined roasting pan. Cover tightly and bake in pre-heated oven at 325F for 2 hrs. or until fork tender.

    remove foil then set the oven to broil and cook the ribs for another 10 minutes or until brown.

    you can also barbeque.

    then served it with mashed potato (classic or baked)

    I do the cooking in the house.

    Mamaya I’ll be doing Dinuguan:

    Ingredients:

    3/4 kilo pork kasim / laman
    2-3 cups pigs dugo (I prefer dugo ng baka)
    ¾ cup vinegar (I prefer Del Monte Cane Vinegar)
    4 cloves garlic (the more the better)
    2 onions ( the more the better)
    Salt and pepper to taste
    sugar instead of msg
    Sili panigang or labuyo (optional)
    1-2 pcs. laurel leaves (optional)



    Procedure: Separate the fat portion of the meat and slice it thinly (pwede ipatad-tad na sa market) but personally I do the cutting. Pagmantikain sa kaserola ang taba ng pork at papulahin. Igisa sa sariling mantika ang bawang at sibuyas to caramelized, ihulog ang pork laman then isangkutsa (haluin para lumasa ang rekado sa laman) isunod ang suka, kaunting tubig (ayon sa dami ng sabaw na gusto) at laurel. Palambutin (mga 30 mins sa mahinang apoy) Salt and pepper, sugar to taste. Kapag malambot na ay ihalo na ang dugo habang hinahalo para di mamuo. Simmer for 15 mins til tender and serve.

    eto naman... sauce:

    Cilantro Garlic Sauce:
    Garlic peeled
    Cilantro trimmed
    Bay leaves
    Black peppercorn, crushed
    onions or shallots
    oregano leaves
    cane vinegar ( i prefer del monte)
    olive oil
    iodized salt
    sugar

    Blend all ingredients in a food processor until fine and until oil and vinegar have emulsified.

    Best for steak and inihaw:drool:

    yang chow..dali lang po yan..well, depende kasi din sa inyo kung ano gusto nyong sahog. but here is my recipe:

    Cooked rice
    ham, diced
    chorizo
    egg, beaten and then cooked and sliced thinly
    salt, to taste
    oyster sauce (optional)
    carrots, diced
    green peas (optional)
    spring onion, chopped
    butter or oil

    Saute ham, chorizo, carrots and green peas in butter or oil. then you can add oyster sauce to improve taste (but this can be optional) then stir in the rice.
    mix well until cooked. then place some of the chopped spring onions (save some for garnish) and eggs. Remove from fire.

    Place in a platter, garnish with remaining spring onions and egg.

    nga pala... if you want a seafoods pwede din... cooked shrimp pwedeng lagay.

    Ingredients:

    oil (olive oil is no. 1)
    lamig na kanin (much better than newly cooked rice)
    garlic (min of 3-4 cloves)
    ham (cubed)
    pcs of egg
    cooked sweet green peas
    hotdog or chorizo (cubed)
    crab meat
    pinch of salt
    sugar (in place of msg)

    note: in fried rice you can add anything left over meat you want to eat as long as walang sabaw.

    Lamasin sa konting tubig ang lamig na kanin (it’s a technic para di maging matigas ang fried rice n’yo) painitin mabuti ang pan or kung may non-stick the better. Put oil then garlic, papulahin at isunod ang medyo basing lamig na kanin at sangagin, kapag wala ng sign ng pagkabasa ay ilagay na ang green peas, at mga meat na gustong ihalo. Haluin ala Chinese style continuously at malapit nang mag brown ang kanin, basagan na ito ng itlog (1-2 pcs) habang mabilis na hinahalo.

    Serve hot.

    Oopps correction lang po sa ingredients ng Sweet & Spicy Crab, it's supposed to be 2 TSP BLACK SESAME OIL & not 2 Tbsp. Sorry for that.

    This is one of my favorite pulutan recipe

    Chilli Con Carne Con Salsa

    You'll need:

    1 pack taco mix powder (Mc Cormick)
    1/4 Kl Ground Pork
    1 Beef Cube
    10-15 Pcs kamatis
    5-6 Pcs Onion
    5 Pcs Green Bell Pepper
    1 Clove garlic
    1 Cheezwiz
    Cornstarch
    Nacho Chips, Taco Chips or Skyflakes (kung ano meron dapat marami)

    Procedure:

    1. Chop yung tomatoes, green bell pepper and onions into small pieces (yung pang salsa na size, di ko alam term kasi dun e).

    2. Igisa yung 1/4 Kl na ground pork sa garlic.

    3.Tunawin sa 1 cup water yung Mc Cormick taco mix.

    4. Ilagay yung Mc Cormick mix sa ground pork. Mix, mix lang hanggang sa maluto yung pork. Lagyan ng 1/4 cup water, and yung Beef Cubes. Hintaying lang matunaw yung beef cubes.

    5. Put in 1/4 of the total size of chopped tomatoes, onions and bell pepper.

    6. Then lagay na yung tinunaw na cornstarch sa pork. Mix lang hanggang sa lumapot. Tapos na.

    7. I-Top sa Nacho Chips, Taco Chips or Skyflakes na marami yung pork mixture pati yung natirang tomatoes, onions and bell pepper.

    8. Top with cheezwiz! ooooolala!

    Best served with hard drinks (kwatro, bilog, empi, granma or generous) kse medyo mabigat sa tyan tong pulutan na to.

    From Soup-a-Holic. This is the recipe my wife and I use:

    Cream of Mushroom Soup

    2 tablespoons butter
    ¾ cup diced onions or shallots
    ¼ cup diced celery
    1 tablespoon minced garlic
    2 tablespoons freshly chopped thyme or dried thyme
    ¼ cup white wine
    3 cups chopped mushrooms (see note)
    1 large can (49 ounces) chicken stock
    3 cups whipping cream
    Salt and pepper to taste
    Pinch of ground nutmeg
    2 teaspoon dried parsley or 2 tablespoons fresh chopped parsley
    1 tablespoon Eastshore mustard (any sweet tangy mustard can be substituted)
    2 tablespoons cornstarch mixed with about ½ cup water

    In large sauté pan, melt butter. Add onions, celery and garlic and cook until soft, 3 to 5 minutes. Add thyme. Deglaze with wine. Add mushrooms and sauté until soft. Add stock and simmer 15 to 20 minutes. Add cream, salt, pepper, nutmeg, parsley and mustard and simmer 15 minutes. Gradually add cornstarch mixture and cook until soup thickens enough to coat the back of a spoon, 8 to 10 minutes.

    Remove from heat and puree slightly with an immersion blender. Soup should be smooth, but there should still be some small chunks of mushrooms visible. Serve as a main dish with hearty bread or a sandwich half. Make 8 servings.

    Note: Use button mushrooms or a mix of your favorite mushrooms. Portobello mushrooms will make the soup a darker color.
