Would it be possible to have traveller's checques in US dollar denominations exchanged into pesos? Would it be better to do this or have the checks converted to US Dollar cash then converted to pesos?

yes pwede ipalit ang tc to pesos, BUT the exchange rate is lower than dollar bills to pesos.
better? depends on what you prefer. do you want the security that TCs provide or do you want the higher exchange rate that you can get with dollar bills?

I'm actually being "sold" TCs by a work colleague who just came from a trip and says he just doesn't have time to have them encashed. He was pitching that TCs are worth more at your suking money changer due to their rarity...sneaky.

your colleague thinks you're an idiot and is trying to rip you off. there are thousands of Amex travel offices worldwide and billions of dollars of TC's in circulation. also, as yebo said, the issuer keeps a little bit of your money as its fee for securing your funds.
