When the temp drops significantly as in 1/4 of the temp gauge, then something is wrong with that car. It should maintain more or less an average temperature reading. My conclusion is your Civic is running better than the Corolla. The Corolla's temp should not drop that much. When I say slightly, I mean a few millimeters higher or lower - maybe one or two higher or lower than normal - nothing more. Having too cool of an engine is just as bad as one that's running way too hot.
My guess is your Corolla doesn't have a thermostat installed.
