I've always used Meguiar's Whole Car Air Re-fresher and Odor Eliminator once a year for the older cars in the garage. It's one-time use -- you turn on your car aircon (recirculate mode), run the blower at full and let the can empty out. Wait 15 minutes and that should be enough for your car to smell like new again.

A detailing shop told me to use Glytwin Antibacterial Odor Remover instead, and get the Cedar Cologne scent since it's closest to the new car scent from Meguiar's. It's supposedly just as good but at a fifth of the price (the 200 mL one).
