Check out the fire walls and the side wheel wells how clean and smooth. How do they make it so clean? I know that these things are assemble with crate motors but where do they hide all the wires and hoses? Or does it come with a separate sheet of metal to cover everything that's bolted on the firewall.

It's quite simple really.
Take out the engine and paint the engine compartment with the same amount of detail you give to the exterior panel (clearcoated, sanded and buffed).
With regards to the wires and hoses, they don't really have that much electronics to begin with, good wiring with appropriate wire looms will cover up unsightly loose wires.
As for the firewall, it's stated in the table below that they smoothed it so malamang new panel to reroute all the wirings into a concealed panel.

i noticed the engine they used is still the classic small block chevy with carburetion style induction. virtually no electronics (no efi and electronic ignition) while the hoses and wiring harness is cleanly routed. The electrical wires, as is normal with U.S. classic engines, are routed in the lower chassis portion where all the electrical solenoid stuff is placed.
in the U.S., you can buy ready made hose kits and wiring harness kits for specific u.s. engine applications. the most famous of these is called PAINLESS WIRING CORP. They sell neatly packaged wiring harness kits with housing. Another famous aftermarket company is RUSSEL which sells complete and neatly packaged hose and plumbing kits for U.S. engine applications.
